⏰ Hours: 40 hours per week
📅 Working Pattern: 5 days over 7

• Early: 06:00 – 14:30
• Late: 10:45 – 19:15

• Breakfast: 06:30 – 07:45
• Lunch: 12:00 – 13:45
• Evening Meal: 17:00 – 19:00

We are recruiting an experienced and adaptable Senior Sous Chef to join our team at Brompton Barracks. This is an exciting opportunity to take on a senior leadership role within a busy Defence catering environment, supporting multiple kitchen operations on site.

Working across 3 kitchens, you will play a key role in maintaining high culinary standards, supporting the Head Chef, and ensuring smooth delivery of both daily catering and functions.

• Support the Head Chef with the overall running of kitchen operations
• Prepare, cook, and oversee the delivery of high-quality meals across all services
• Lead, motivate, and develop kitchen teams across multiple kitchens
• Ensure consistency, quality, and presentation standards are maintained
• Oversee food hygiene, safety, and compliance across all areas
• Assist with menu planning, stock control, ordering, and allergen management
• Support and deliver catering for functions and special events

• Proven experience as a Senior Sous Chef or strong Sous Chef ready to step up
• Comfortable working across multiple kitchens in a fast-paced environment
• Flexible and adaptable, particularly around functions and varying service demands
• Strong leadership, communication, and organisational skills
• Culinary qualifications desirable (City & Guilds / NVQ or equivalent)
• Passion for high-quality food and excellent service
